I am glad you made the point about Apple including an ARM SoC on an x86 motherboard, but I think the notion of it being used in some hybrid manner that is visible to a normal user is not likely. If Apple wanted to run iOS apps on Mac OS X they would make the simulator ABI stable and require iOS developers to submit fat builds to the app store.

The point that is missing is that Apple could benefit a lot from having an A5 in their current systems without changing anything obvious to the user. It could replace the SMC with would give Apple an embedded Darwin environment. With something that functional there are a ton of neat things I can think of to do:

* Real time video hardware transcode without using main CPU resources
* Running the Bonjour sleep proxy on the SMC for low power Bonjour responses while the system is asleep
* A full posix environment for running fan control and internal sensors (faster bring up, no obvious user benefits)
* Provide a high performance kernel debugging platform inside the Mac directly attached to its busses (very useful inside of Apple)
* Putting the x86 CPU completely to sleep for low power video playback
* etc

Also, anything discrete in the iPhone/iPod/iPad (wifi, the multi-touch controller, accelerometer, etc) is a candidate for eventual inclusion in an SoC (obviously some of those may be difficult to integrate due to size or process issues). Many of those devices are also present in Macs, so an SoC that includes them could replace a number of existing discrete components, which might end up being a net cost savings. Depending on how thoroughly Apple integrates the services provided by an embedded iOS service processor into Mac OS X it could even eventually make it substantially more difficult for people to install on Hackintoshes.

It could be a huge functionality win for what is a fairly cheap part, and might even be a cost savings. The only real question is if the engineering effort is worth it.
