I don't know for sure, but I would guess it has to do with chip packages and pincount, i.e. bandwidth costs money.

I think you underestimate just how bad the write speed is.
A single MLC chip is literally five times slower at sequential writes than a hard drive, and TLC is even worse.

For writes, the chips are slower than the channel, so channel count doesn't really matter so much as total number of flash chips.

It's possible to put multiple fully independent areas in a single chip, but you'd need to spend a lot of area on isolation rings, since one area is doing a noise-sensitive analog-to-digital conversion to read MLC cells, while another is bulk erasing at -20V.

So, it's probably not gonna happen, at least until SSDs overtake phones, camera cards and USB drives as the main use of flash.

A 16GB USB drive is probably a single or dual channel stack of 2 8GB TLC chips. It's very slow for writes, and kinda slow for sequential reads. Nothing wrong with that for a USB stick, but it's no HD replacement.

What you're missing is terrible performance.

It's practical if you're willing to accept it being slower than a conventional hard drive. Maybe if netbooks make a comeback.
