Why not initialize all variables to zero?

True, which is why we have automatic tools for converting stable legacy codebases such as c2rust.

That being said in some cases a new codebase might just supplant an old one. Case in point: I've been using ripgrep for a while and I just don't need grep anymore - one of the tools I used the most of the years. ripgrep has more features, is massively faster and is not limited to POSIX platforms. The latter two characteristics are made possibly by Rust, and if your codebase is simpler and you don't have to worry about performance, stability and portability then you can focus on working on features.
