What's gratuitous? One of my mid-career tasks at Apple was to take the AAC code (at that time very new, perhaps even not yet standardized, certainly not in use anywhere mainstream) and convert it from something taking up 50% of CPU (and so essentially not usable as a way to play background audio in iTunes) and pull it down to 1 or 2%, which I did through the fact that, even though PPC had lousy load-store compared to x86 at the time, it had great FP (FMAC, 32 registers) and great SIMD.

OK, today audio is a trivial problem, quite likely running on a dedicated media path in your SoC. But the path to that point passed through widespread (and widely used) FP+SIMD.
There are similar early-stage concepts today -- eg standard file formats for 3D objects, for face and body skinning and texture mapping, for ML models, for AR interaction.
And even if the end point is that these eventually run almost purely on the GPU or NPU, there's an initial stage where you want to do your exploration and initial deployment using FP+SIMD simply because you have no idea quite what will hit and what won't, what will need to be changed in a year.
