Building from source and installing the binaries to the system is about the worst thing you could do to your system. It's the fastest way to trash the system. A package you can uninstall or downgrade. But you cannot uninstall a manually installed piece of software. You would have to manually delete every file that was installed from all over the system and reinstall any package that was affected by it (e.g. if the standard g++ binary was replaced). If you really do want to build from source - build a package and install that package. But a VM or container approach could be much simpler than that, especially if you don't have experience.
