Given the mechanical hardware associated with mounting heatsinks to today's CPUs (springs to apply pressure to the backside of the PCB at the center of the heatsink, etc.), the power issues (bypassing 1.x volts at 50+A is not easy, requires lots of capacitors very close to the CPU), and the number of PCB layers required to escape signals from the forest of pins, it's unlikely you'd save any 2D area since you'd have to offset the sockets anyways. So you might as well put all the sockets on the same side.
