RISC CPUS have have already been replaced by x64 where most CPUs were sold - workstations and few-socket servers. Because of both cost and software compatibility.
If software compatibility was not important new ISAs would be introduced and dumped frequently. But it is, and it means there's less sense for Itanium to exist than some people imagine.
Also the market model for Itanium seams to be ugly. With one CPU supplier it's not open; but you don't get benefits of closed platform like being able to buy application software, backend software, servers, storage, services from single supplier (not only for convenience, but for the long term commitment to your complete solution; so that let's say a separate OS maker or application maker doesn't suddenly withdraw support for your set).
